Grain/Gluten-Free Pancakes
 
 
Makes about 20 pancakes.

Ingredients
  • 1 Cup of Coconut Flour (sifted)
  • 1½ tsp Baking Soda
  • ¼ tsp Salt
  • 4 Tbsp Cinnamon (optional)
  • ½ tsp Liquid Stevia or ¼ tsp Powdered Stevia or ¼ cup Honey or Sugar (we use the powdered Stevia)
  • 12 Eggs
  • 2 Cups Milk or Almond/Coconut Milk
  • 1 Stick of Butter or ½ Cup Coconut Oil
  • 2 tsp Vanilla (optional)
Instructions
  1. Mix all of the dry ingredients together in a large bowl.
  2. Mix all of the wet ingredients together in a separate bowl (if you are using butter make sure it's completely melted before adding to wet ingredients).
  3. Pour the wet ingredients into the dry ingredients and mix well.
  4. Cook pancakes on medium - medium high heat.
  5. Enjoy!
