Olive Oil Cake
  • 1 Tbs Butter
  • 3 C + 2 Tbs Flour
  • 4 Eggs
  • 1 C Sugar
  • ¼ Tsp Lemon Zest
  • ¾ C Extra Virgin Olive Oil
  • ⅔ C Milk
  • 3 Tbs Grand Marnier
  • 1 Tbs Baking Powder
  1. Preheat oven to 325
  2. Grease an 11 C bundt pan with butter and dust with flour
  3. Beat eggs and sugar with an electric mixer on medium high until pale yellow
  4. Add the rest of the flour, lemon zest, oil, milk and Grand Marnier to mixture and combine with a wooden spoon
  5. Add baking powder and stir until combined
  6. Spoon batter into pan and smooth top with the back of a spoon
  7. Bake until cake is golden brown and toothpick inserted into center comes out clean (approx 40 min)
  8. Allow cake to cook in pan on a wire rack
