Here’s what we are having for dinner this week:
Monday: Homemade Chicken Noodle Soup (recipe below) – I made TONS, so we will have this several nights this week. My sinuses are feeling MUCH better after the massive amounts of onions, garlic and pepper. 🙂
Tuesday: Probably leftover soup (to continue to help the sinuses).
Wednesday: Grilled steak, baked potatoes and grilled yellow squash
Thursday: Pan-seared tilapia fillets, rice pilaf (I just put carrots and corn in with the rice), and fruit salad.
Friday: Leftover Chicken Noodle Soup
Saturday: Out to eat for my birthday!! 🙂
Sunday: Bacon wrapped chicken with cream cheese and jalapenos, mashed potatoes, and salad. (Recipe to come later!)
Here’s how I made my Homemade Chicken Noodle Soup:
First I boiled two small whole chickens in a large pot, along with a good amount of sea salt and pepper.
Then I cut up 3 onions, a bag of carrots, 2 yellow squash and a bag of celery. I also minced 1 1/2 bulbs of garlic.
After the chickens were done boiling, I took them out to let them cool and put the onions, carrots, squash, celery and garlic into the pot of boiling broth.
Once I finished deboning the chicken, I put the pieces back into the pot, along with 2 bags of whole wheat spaghetti noodles.
Then I let it cook until the noodles were done.
You can also add extra seasonings such as Thyme or Rosemary if you want to. I chose to just make it with salt and pepper and we LOVED it!
When you have a sinus infection or a cold, it is definitely worth it to take the time to make homemade chicken noodle soup! I’m always glad when I do!
