I saw this Asparagus Casserole recipe when I was looking through the Easter Recipes eBook that I posted about yesterday and I just couldn’t wait to try it!

Asparagus is on sale for $1.47 a pound this week at Kroger, so it’s the perfect time to make this dish!

You could use it as a side dish to your Easter Ham this weekend, or add some cooked chicken to make it a full meal casserole. You could also use homemade crackers instead of store-bought. I’m planning on trying it again with homemade gluten-free rice crackers.

Here’s what you need:

2 pounds of fresh asparagus
1 can of cream of celery soup
1 can of cream of chicken soup
2 cups of crushed saltine crackers (I used about 1 1/4 sleeves)
2 cups of shredded cheese (the original recipe calls for Velveeta, but I’d much rather use the real stuff)
2 eggs

Here’s what you do:

1. Break off the ends of the asparagus. Just hold the asparagus at both ends and snap off the end — it will break where it’s supposed to (thanks to my friend Erin at $5 Dinners for that tip!) :)

2. Wash the asparagus, then put it in the crockpot.

3. Add the cream of chicken soup and the cream of celery soup, the crushed crackers, the cheese and the eggs.

4. Mix it all together really well and cook on HIGH for 3 – 3 1/2 hours.

5. Enjoy! I will definitely be making this one again!

If you require a gluten free recipe, you can replace the crackers with gluten free, toasted bread broken in small pieces and replace the canned soup which has wheat flour; make a cream sauce with butter, milk and cornstarch to thicken. Add parmesan cheese on top before baking and paprika sprinkled for added seasoning.

Oh my, that looks great! Even better is that asparagus is on sale for $0.99/lb starting tomorrow at my store! I am psyched to try this recipe - THANKS!!!

@lynn @ Maven of Savin, I just saw that asparagus is 99¢ at Brookshires... definitely the time to stock up on asparagus!

I was thinking about doing this with green beans since I don't have asparagus right now. Yum........thanks .-= Karen´s last blog ..Dying Easter Eggs With Food Coloring =-.

@Karen, Oh, I bet it would be great with green beans! Let us know how it turns out. :)

Love Asparagus! I just might make this recipe this weekend. I wonder if the kids would try it since the asparagus is mixed in? My three year old is a bit picky. I am usually the only one who eats asparagus when I cook it! Thanks for the linky! .-= Renae @ Madame Deals´s last blog ..Lucky Brand Jeans Spring Sale: Jeans as Low as $9.99 =-.

@Renae @ Madame Deals, I'm thinking I might need to cut the asparagus into smaller pieces next time for the kids. And I'll likely have to put it in the food processor for my 2 year old (she's really picky about textures).

I love asparagus! I will be trying this recipe when my asparagus finally pops up - just need some consistant 60 + degree weather. :)

@Alea, I can't wait to have some more land so that I have room to plant more veggies! Any tips for asparagus planting?

That looks really yummy! I might have to try that! .-= Stephanie @ Couponing 101´s last blog ..New Coupons for April =-.
