I have to admit, I never would have dreamed of using coconut milk as whipping cream, but it is brilliant! I had actually read about this idea before I saw in on Pinterest, and who would’ve thought it’s as easy as just putting a can of coconut milk in the refrigerator! This makes a wonderful gluten and dairy FREE whipped topping and it is unbelievably simple. All you need is a can of coconut milk, a little cinnamon, and a dash of vanilla (of course my preference would be homemade vanilla)! Voila! I can’t wait to try this on fresh strawberries!
