I have to admit, I never would have dreamed of using coconut milk as whipping cream, but it is brilliant! I had actually read about this idea before I saw in on Pinterest, and who would’ve thought it’s as easy as just putting a can of coconut milk in the refrigerator! This makes a wonderful gluten and dairy FREE whipped topping and it is unbelievably simple. All you need is a can of coconut milk, a little cinnamon, and a dash of vanilla (of course my preference would be homemade vanilla)!
Voila! I can’t wait to try this on fresh strawberries!

Does it become light and fluffy? All I have ever seen is the milk becomes thick
I make this all the time. The trick is to put a metal bowl and utensil in the freezer, and make sure that they are good and cold before whipping up the coconut cream. Since the cream will melt at 76degrees, you also have to refrigerate it right away.
It gets thick, then you whip it up with the vanilla and sugar to make it fluffy. It’s not a perfect substitute, but for those who have to be dairy-free it’s definitely a good substitute to try!

It definitely tastes like coconut. It is mild, especially if you’re topping a cake or something with a more dominant flavor, but it is coconut cream!
