I love just about anything with feta! These cucumber feta rolls look like a perfect Easter appetizer and they look pretty simple to make too (and you can make them ahead of time)! I am completely in love with my mandoline (just BE SURE to get the gloves too if you get one because if I wouldn’t have taken the advice of other reviewers on Amazon I might not have a couple of my fingers anymore!) , but if you don’t have a mandoline slicer than you can whip up just the filling and use it as a dip and serve with fresh raw veggies.
