How soon should I cancel the automatic enrollment? Also, you mentioned that you had done this deal a number of times. How long should I wait before trying again? Thanks for the info!

I would recommend cancelling right after you get your shipment of 3 coffees and a travel mug.
In six months, you can do the coffeemaker deal (more details here: http://www.survivingthestores.com/2009/04/great-gevalia-deal.html), but you can't do the 3 for $3 again (it's a one time per address thing).

So this deal is around all of the time? If I were to wait until closer to Christmas, it would still be here most likely?

It has been around for a while… although I can't guarantee that it will be around forever.
Boca Java had a similar deal a while back where you could get 4 coffees for $4.95. But now you have to pay $14.95 for the four bags of coffee.
But yes, most likely the Gevalia deal will still be around then.
