
Laura over at Organizing Junkie just posted an awesome link resource on utilizing your freezer. She compiled LOTS of links for stocking your freezer, once a month cooking, and freezer recipes. I was inspired and decided to try using this week to stock up my freezer. My cousins are having their second baby at the end of this month, so I will probably make 3x the amount on some days so that I will have some meals to take to them.
I like to focus on baking yummy goodies during the holiday season, so it will be nice to have several meals ready to pop in the oven.
Here's what on the menu for this week:
Monday: Crockpot Taco Chicken
Tuesday: Italian Meatloaf

Meatloaf can be mixed, formed into a loaf and frozen before cooking. To bake a frozen loaf, use the standard method but bake 1-1/2 to 2 times longer. Always check for doneness with a meat thermometer.
Whole baked meat loaves can also be frozen. Bake as usual, let cool to room temperature, wrap in foil, place in a sealed plastic bag, and store in the freezer up to 6 months.
Thursday: Chicken Spaghetti x2 and add extra pasta (I will put it into three casserole dishes, bake 1 and freeze the other two)
Friday: Breakfast for dinner! Make 20 Pumpkin waffles and freeze 15. Make 2 dozen blueberry muffins and freeze 18.
Saturday: Garlic Chicken and Spinach Spaghetti (I really could have spaghetti in some form 5 days a week) :)
Sunday: Leftovers
